The making of garnacha red wine at Matt’s Vineyard® is made with grapes that, after being harvested, spend 24 hours preferment in a refrigerated truck which lengthens the aqueous phase of the maceration. The grapes enter stemmed for fermentation in stainless steel tanks that have temperature control. The wine is then aged in 500 litre barrels made of French oak, where it remains for about 10 months.
